The coffee

Four origins on bar this week. Here is what is in the cup.

Our menu rotates every four to eight weeks. Each lot lists the producer, the cooperative or farm, the altitude, the harvest year, the processing method, and our brew recommendation. If you want the green-coffee invoice, ask at the bar.

Bookkisa is a women-led cooperative of 540 smallholders in the highlands above Yirgacheffe. The cherries are hand-picked at peak ripeness, depulped within hours, and fermented for 36 to 48 hours before sun-drying on raised beds. The cup is bright, floral, and unmistakable.
